Garlic Butter Shrimp Pasta




I got this recipe from damndelicious and boy did it turn out amazing. I will say, that I did not use as much butter as the recipe calls for because it seemed a bit overwhelming! It took about 20 minutes to make and was so delicious! I didn't want to just eat shrimp so I cooked some angel hair pasta to go with it and BAM quick and easy gourmet dinner. 
So here is the recipe:

INGREDIENTS
1 stick butter (I only used half a stick)
1 1/2lbs shrimp, peeled and deveined (I don't think i used this many shrimp either, I only made enough for 2 servings)
salt and pepper
5 cloves of garlic, minced
1/4 cup of chicken stock
juice of 1 lemon
2 tbsp chopped fresh parsley (i'm not the biggest fan of parsley so i omitted this)

INSTRUCTIONS
(I started with boiling some water in a big pot so I could toss in the angel hair pasta when I knew the shrimp were about to be finished!)

1. Melt 2 tablespoons butter in a large skillet over medium high heat.

2. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. 

3. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. 

4. Stir in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes. 

5. Stir in remaining 6 tablespoons butter, 1 tablespoon at a time, until melted and smooth.
6. Stir in shrimp and gently toss to combine. 

7. Serve immediately, garnished with parsley leaves, if desired.

et voila! Delicious gourmet dinner

Hello again!

I started this blog while I was in college. Now two, almost three years later, I want to try and start it up again.
